INGREDIENTS

  • 3 ½ cup (875 ml) mustard powder
  • 1 ⅓ cup (315 ml) whey
  • 14 tbs (210 ml) water
  • 2 tbs (15 ml) sea salt

DIRECTIONS

In a bowl, mix together all the ingredients. Transfer the mixture into your Mortier Pilon fermentation jar. Make sure to leave 3⁄4 of an inch (2 centimeters) of headspace between the mixture and the rim of the jar.

Let the mixture ferment at room temperature, covered, for 3 days. Once the desired level of fermentation has been reached, refrigerate or serve.
