GINGER BUG SODA

This homebrewed drink is just as a fizzy and tasty as store-bought soda! Plus, it’s packed with good bacteria sure to heal your stomach and boost your immune system.

INGREDIENTS

  • 4 tbs (60 ml) grated ginger root
  • 2 tbs (30 ml) cane sugar
  • 4 cups (1L) water
  • ½ cup (125 ml) room temperature fruit juice or tea, any kind

DIRECTIONS

Place 2 tbs (30 ml) ginger root, 1 tbs (15 ml) sugar and 2 cups (500 ml) water in your Mortier Pilon fermentation jar. Stir. Let the mixture ferment at room temperature, covered, for 1 week. Mix in the rest of the ginger, sugar and water. Let the mixture ferment at room temperature, covered, for another week.

Mix ¼ a cup (65 ml) of the ginger bug prepared in step 1 with ½ a cup (125 ml) of juice or tea. Transfer the mixture to Mortier Pilon swing-top bottles. Let the soda ferment for another 4 days in the refrigerator.
