- 5 lemons
- 1 tsp (5 ml) cane sugar
- 1 tsp (5 ml) whey
- 4 cups (1L) water
Juice the lemons. Transfer the juice to your Mortier Pilon fermentation jar. Add the sugar, whey and a small amount of water. Mix.
Add the rest of the water. Make sure to leave 2 inches (5 centimeters) of headspace between the mixture and the rim of the jar.
Let the mixture ferment at room temperature, covered, for 5 days. Refrigerate or serve.
