Iota Carrageenan is a natural gelling agent derived from red algae, used to create smooth and elastic gels.

Description

Like Agar-Agar, carrageenan is obtained from the cell walls of red algae. Iota Carrageenan is a vegan food additive that usually produces an elastic gel that does not degrade if it is frozen and thawed. It also forms a stronger gel in the presence of starch.
